When stored properly in an airtight container, whole star anise can retain its rich aroma for up to 18–24 months, although it is best enjoyed within the first year for maximum flavour. Whole pods generally stay fragrant much longer than ground star anise because their natural essential oils remain protected until they are broken or ground.
